Fat-Free Potato Salad
Ingredients

1 ½ pounds of potatoes that have been peeled and diced

⅓ of a cup of diced celery

1 diced onion
-
1 cup of fat-free mayonnaise
-
2 tablespoons (tbsp) of mustard
-
1 teaspoon (tsp) of parsley
-
Salt to taste

Black pepper to taste
Directions
-
Place the potatoes in a pot and add enough water to cover them.

Bring the potatoes to a boil and cook until tender.

Drain the potatoes and set them aside to cool.

Once cool, place the potatoes, celery, and onions in a large bowl and mix well.

Add the mayonnaise, mustard, salt, pepper, and parsley to the bowl and mix.

Chill for at least 1 hour.

Serve in a large serving dish or bowl.
