Grilled Low-Fat Barbecue Chicken
Main ingredients

½ ounce (oz) of paprika

½ ounce (oz) of chili powder

2 teaspoons (tsp) of ground cumin

2 teaspoons (tsp) of sugar

1 teaspoon (tsp) of dry mustard

1 teaspoon (tsp) of black pepper

1 teaspoon (tsp) of dried thyme
-
1 teaspoon (tsp) of dried oregano
-
1 teaspoon (tsp) of cayenne pepper
-
2 pounds of chicken breast, cut into large pieces (about the size of a cherry tomato)

2 bell peppers, cut into large pieces
-
1 onion, cut into large pieces
-
8 cherry tomatoes
-
1 ounce (oz) of vegetable oil
Barbecue sauce ingredients

1 ½ cups of chopped onion
-
1 cup of chopped green onion
-
1 cup of chopped bell pepper
-
4 tablespoons (tbsp) of garlic powder
-
16 ounces (oz) of canned tomatoes
-
1 cup of water
-
3 tablespoons (tbsp) of salt
-
½ tablespoon (tbsp) of black pepper
-
½ tablespoon (tbsp) of white pepper
-
½ teaspoon (tsp) of cayenne pepper
-
½ tablespoon (tbsp) of Tabasco sauce
-
16 ounces (oz) of canned tomato sauce
-
2 large or 3 small bay leaves
-
1 tablespoon (tbsp) of sugar
-
1 tablespoon (tbsp) of Worcestershire sauce
-
1 tablespoon (tbsp) of lemon juice
Barbecue sauce directions

In a large roasting pan add onions, bell peppers, and garlic powder.

Sauté until soft.

Add tomatoes, water, salt, black pepper, white pepper, cayenne pepper, Tabasco sauce, tomato sauce, bay leaves, sugar, Worcestershire sauce, and lemon juice.

Cover and simmer for one hour.

Cook uncovered for 15 minutes.

Serve over rice.
Chicken directions

Put the paprika, chili powder, ground cumin, sugar, dry mustard, black pepper, dried thyme, dried oregano, and cayenne pepper in a bowl and mix well.

Alternate chicken pieces, pepper pieces, onion pieces, and cherry tomatoes on a skewer to form kabobs.

Lightly brush the vegetable oil on the kabobs, and sprinkle with the spice mix.

Cover and let the kabobs sit in the refrigerator for 30 – 45 minutes.

Heat the grill, then place kabobs on the grill.
-
When cooked on one side, turn the kabobs over.
-
When completely cooked, brush with barbecue sauce.

Place the kabobs on a warm plate and serve.
Your measuring spoon set may have tbsp, TBS, T, TB, or Tbl on it. They all mean tablespoon.
