No Sugar Added Jelly Roll for Christmas Yule Log
Ingredients
2 cups of all-purpose flour
½ teaspoon (tsp) of salt
2 teaspoons (tsp) of baking powder
4 eggs
2 tablespoons (tbsp) of Splenda
1 cup of milk
2 teaspoons (tsp) of vanilla extract
1 cup of sugar free jam
Directions
Preheat your oven to 350 degrees.
Sift the flour, salt, and baking powder into a large bowl.
Break the eggs into a mixing bowl.
Using the wire whisk attachment on your mixer, whisk the eggs on high speed for ten minutes, adding the Splenda a little at a time.
Heat the milk until it is slightly warm (about 20 seconds in a microwave).
Add the milk to the mixing bowl.
Switch to the paddle attachment on your mixer.
With the mixer on low speed, add the dry ingredients a little at a time until fully combined.
Line a small sheet pan with parchment paper and spray with non-stick spray.
Pour the batter onto the parchment paper and spread it evenly.
Bake for 15 minutes.
Remove the pan from the oven.
Flip the pan upside down on a clean work surface and pull the parchment paper off of the cake.
Let the cake cool.
Place the cooled cake on a length of plastic wrap.
Spread the jam on the cake.
Roll the cake toward you until it looks like a log.
Cut a corner piece at an angle to represent a tree stump, and put it on top of the roll at the center.
Garnish with sugar-free candies and chocolate.
Dust with sugar substitute.
Your measuring spoon set may have tbsp, TBS, T, TB, or Tbl on it. They all mean tablespoon.
