Sautéd Kale with Balsamic Vinegar
Ingredients

½ cup (c) of diced red onion

½ cup (c) of grated parmesan cheese (optional)

1 diced red bell pepper

2 teaspoons (tsp) of minced garlic

2 tablespoons (tbsp) of balsamic vinegar

4 tablespoons (tbsp) of olive oil
-
8 ounces (oz) of thinly sliced button mushrooms

8 cups (c) of roughly chopped kale
-
Salt to taste

Black pepper to taste
Directions

Heat a large pan over medium heat.

Add the olive oil to the pan.

Add the onions and peppers.

Cook for 2 minutes, or until the vegetables begin to soften.

Add the mushrooms.

Cook for 2 more minutes.

Add the garlic, kale, and balsamic vinegar.

Cook until the kale darkens in color (about 2 minutes).

Add the cheese (optional).

Salt and pepper to taste.
